Baked Vanilla Pistachio Doughnuts
Makes about 9 to 10 doughnuts
Ingredients:
- 1 cup all-purpose flour
- ⅓ cup granulated sugar
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon sea salt
- 1 egg
- ½ cup vanilla Greek yogurt
- 4 tablespoons melted unsalted butter
- 1 teaspoon vanilla extract
For icing:
- 1 cup powdered sugar
- 2 tablespoons reduced fat milk
- 1 teaspoon vanilla extract
Toppings:
- ½ cup finely chopped pistachios
Directions:
- Preheat oven to 350°F. Lightly oil a doughnut baking pan with non-stick cooking spray.
- In a medium bowl, stir together flour, sugar, baking soda, baking powder and sea salt. In a separate medium bowl, whisk together egg, yogurt, melted butter and vanilla extract.
- Stir wet and dry ingredients together. Avoid over-stirring. The batter will be thick and sticky.
- Place batter in plastic piping or bag and fill each doughnut cavity with batter to about ¾ full.
- Bake doughnuts for 10 to 12 minutes or until a toothpick comes out clean. Let cool for 5 minutes.
- To make the glaze, combine powdered sugar, vanilla extract and milk in a small bowl with a fork or small whisk.
- Drizzle vanilla glaze over each doughnut, top with chopped pistachios and serve. Bon appetite!
